How to Reverse Sear.
The goal with Reverse Sear is to get your meat to the desired cooking level Rare-Medium with indirect heat and then finish the cook over searing hot grill to finish.
Heat BBQ /smoker /oven temp 250f /120c and cook tri tip indirect from heat till you reach internal of 140f/60c than rest meat while you get direct cooking /raise oven /bbq temp to 400f/205c and sear meat.
Rest for 10 minutes and slice across grain, and serve with some hearty vegetables for the family 😊
