Here’s a recipe great for the family with some big flavours.
First to make the broth.
1.5 cup beef stock
1/3 cup hoisin sauce
2 garlic cloves crushed
2cm cube ginger grated
3 shitake mushrooms sliced
1tsp soy sauce
Juice from 1/2 lime
1 small shallot thinly sliced
1/2 tsp Harvey’s Asian market signature dust
Place all in ingredients and on a very light simmer let them reduce for bout 45 minutes than put aside.
Now for the Brahman.
Set smoker /oven/bbq to 120c/250f and cook Brahman to internal temp of 76c.
Place in a tray with the delicious broth you made earlier and wrap tray with alfoil and back into your smoker /bbq oven.
Further cook Brahman to an internal of 98c _100c make sure it is soft and tender.
When soft remove tray and set aside to rest for an hour.
In this time prepare some snow peas thinly sliced, julienne some carrots and some thin chilli slices.
Remove the outer leaves of lettuce, this makes your cups.
Thinly slice the Brahman place inside lettuce and drizzle that delicious broth from tray over meat, add your carrots, snow peas, and chilli and your done.!
