Some lunches and feeds are just asking for a dish that suits our hot climate. Here is a simple dish that will give you perfect chicken breast every time that can be served with a fresh summer vegetable, basil and goats cheese salad.

Easy, Quick and flavour packed.

What you need:
4 chicken breast
½ cup Harveys Kitchen Herbs & Honey Meat Rub
drizzle olive oil
Goats Cheese
Cucumber
Cherry tomatoes
Peas
Fresh basil
Apple Cider Vinegar

How to make it:
Wash chicken breast and pat dry with paper towel.
Place chicken breast in bowl and coat with Herbs & Honey Meat Rub.
You can use any Carnivore Candystore dry rub to match your taste or mood.
Set aside and allow chicken to absorb dry mix.
Heat a frypan (with a lid) to medium and drizzle with olive oil.
Place chicken breast into pan and fry for 1 minute.
Turn chicken and fry other side for 1 minute.
Add ½ cup of water to pan and cover with lid.
Turn heat to low and cook for 10 minutes.
Remove from heat and allow to rest for 5 minutes with lid on.
While your chicken rests create your own version of this fresh summer vegetable, basil and goats cheese salad with these ingredients or you can really use any vegetable combination to suit the crowd. (Peas can be difficult)
Toss salad lightly in a splash of olive oil, apple cider vinegar and pinch of salt + pepper.
Slice chicken and serve with the fresh salad.
