“Boating”

Boating is a technique used to give the meat a nice solid bark, while still letting your meat retain its juices.

WHAT YOU NEED…
  • Favourite Steak
  • Choice of BBQ Rub/Seasoning
HOW TO DO IT…
  1. First place  some alfoil in the base of a tray 
  2. Place the brisket on the alfoil then tighten the alfoil around the brisket forming a boat like shape around the brisket leaving the top exposed to let the bark be able to set. 
  3. On the boat you have formed, place enough liquid (hot beef stock,) in base so the brisket can retain this moisture.
  4. This way you have liquid in a tray, helping your brisket from going dry while leaving the bark untouched, giving a nice crust.

 

“Glazing Ribs”

 

WHAT YOU NEED…
  • Smoked Pork Ribs
  • Choice of BBQ Rib Sauce
HOW TO DO IT…
  1. When glazing ribs, always ensure the sauce you glaze with is warmed through to give a nice smooth even coverage.
  2. By warming the sauce it helps to thin it out for application onto your ribs
